Method to make Malai Kofta
-To make delicious Malai Kofta, first boil the potatoes. After this, keep the boiled potatoes in the fridge for 5-6 hours. Keeping potatoes in the fridge will cool them down well and this will make it easier to make koftas and will also increase their taste.
- After the fixed time, take out the potatoes from the fridge, peel them and mash them in a bowl. Now crush the paneer in the same bowl. Now mix the paneer and potatoes well. When the potatoes and paneer are mashed properly, add refined flour to it and mix.
- Keep in mind that this mixture should neither be too hard nor too soft, otherwise there may be a problem in making koftas. After this, cut fine pieces of dry fruits and mix sugar in them. Now put oil in a pan for heating.
-While the oil is heating, make round balls of the paneer-potato mixture and stuff dry fruits in between. After this put these balls of koftas in hot oil and deep fry them. Fry the koftas till they turn golden brown. After this, take them out in a plate and keep them aside.
-Now cut the tomatoes and prepare a paste with the help of a grinder. After this make a paste of onion and ginger.
-Now put two tablespoons of oil in a pan and after heating add onion-ginger paste and fry it. After some time add tomato paste and cook.
-Add cashew paste to it as well. After cooking the gravy for some time, add 2-3 tablespoons of milk and then add all the dry spices and kasoori methi to the gravy and cook it.
-When the gravy is cooked well and starts leaving oil, add half a cup of water (as needed) and cook till the gravy becomes slightly thick.
- After this, add cream and one teaspoon of sugar to it, mix and let it cook. When the gravy is ready, add fried koftas to it and mix with the help of a ladle. Malai Kofta with restaurant like taste is ready to serve.
