Method to make Bengali doi mach –
- First prepare the fish mixture. That is, put the fish in a bowl, add turmeric, red chili powder, salt and a small spoon of mustard oil and mix it well. Or apply all these ingredients over the fish. Cover and keep aside for 15 minutes.
- Now, in a bowl whisk curd and add turmeric and red chili powder. Keep this aside too. To fry the fish, heat the pan and add two tablespoons of mustard oil. Heat the oil till it starts smoking. When the oil becomes hot, put the fish in it. Fry it well on both the sides till it turns light brown. When the fish turns brown or ¾ percent cooked, take it out in a plate. Keep aside.
- Again heat the same pan with mustard oil. When the oil becomes hot, add bay leaves, cumin and all the whole spices and fry on a low flame.
- When the spices start changing their light color, then add onion paste and fry it. When the onion turns light brown, add ginger-garlic paste to it. You can also add some water to it. Turn the flame to medium and add beaten curd to the pan. Stir the mixture lightly and leave it to cook on a low flame for 10 to 15 minutes.
- Cook it till the color of the mixture turns mustard-golden-yellow. Then add salt to it. After this add the pieces of fish to it. Cook on low flame for 10 minutes. When the oil comes on top of the fish and the fish is cooked completely, switch off the flame and taste it. Pour lemon juice over it while serving. Your Bengali doi maach recipe is ready.
